Ingredients:

400g maida (all-purpose) flour
A pinch of baking soda
1 tbsp yogurt
600g sugar
2 cups water
75g ghee or butter
Oil for frying

Madatha Kaaza

Method:
  1. Mix the flour with baking soda, ghee, yogurt, water and make to fine dough. Keep aside for 15 minutes.
  2. Mix the sugar with water and boil to make a fine syrup.
  3. Make small balls from the dough and roll into thin chapathis. Apply some ghee with a brush on the chapathi, sprinkle some flour and fold from one end. Paste the edges with water.
  4. Roll this folded dough again to 5" wide and cut into pieces.
  5. Deep fry in oil until golden color and soak in syrup for few minutes.
  6. Remove from syrup and serve when they are cool.
