Ingredients:

8 garlic flakes, un peeled
1 tsp salt
1 tsp freshly ground black pepper
2 cloves
1/2 tsp thyme
4 springs parsley
3 tbsp oil
4 1/2 cups water
1 1/2 lbs potatoes diced
1/2 tsp saffron
2 bread slices, toasted
1/2 cup grated cheese

Garlic Soup

Method:
  1. Boiled garlic keeps a person healthy. Though hot garlic soup undoubtedly has a stimulating effect, its healing potential is no quite so obvious.
  2. Drop the garlic in boiling water for 1 minute. Rinse and peel.
  3. Put the garlic into a large saucepan together with the cloves, thyme, parsley and oil. Add water and season to taste.
  4. Bring to the boil and simmer for 30 minutes. Strain the soup and return it to the pan.
  5. Add potatoes, saffron and simmer for another 20 minutes or until the potatoes are tender.
  6. Remove from heat and pour over the bread slices.
  7. Serve by sprinkling grated cheese over it.
