Ingredients:

1 cup maida (all-purpose) flour
2 tbsp butter
A pinch of soda-bi-carbonate
3/4 cup pea paste
1/4 cup bathura paste
1 1/2 tsp salt
Paste of 2 green chilies
1/4 tsp nutmeg powder
2 tbsp grated cheese

Method:
  1. Sift the flour, 1/2 tsp salt and soda-bi-carbonate twice.
  2. Rub butter into the flour. Knead with sufficient warm water and keep covered for 30 minutes. Knead it again and make small balls. Roll out each ball into rectangular puris.
  3. Fry pea paste and bathura paste in a pan till the water evaporates.
  4. Add green chili paste, 1 tsp salt and nutmeg powder. Mix well.
  5. Spread this paste over the puris. Sprinkle grated cheese on them and roll in the shape of swiss rolls.
  6. Wrap in a clean muslin cloth and keep aside for 1 hour.
  7. Brush oil from the outer surface. Bake in a pre heated oven till light brown and crisp.
  8. Serve with sauce or chutney.
