| Ingredients: 6 eggs
3-4 potatoes, boiled, peeled & mashed
1 tomato, chopped
2-3 green chilies, chopped
1 small onion, chopped
1 sprig curry leaves
Salt to taste
Ghee (butter) for frying |
Egg Patties

Method:
Heat 1 tbsp of ghee in a pan and fry the onions until golden brown. Also add tomato,
salt, curry leaves and fry for another 5 minutes.
Then add 5 eggs, mix and cook until they are boiled. When they are done remove and keep
aside.
Beat the remaining egg in a separate bowl.
Place some mashed potato in the middle of the palm, press that with the fingers to a
small chapathi shape. Put the egg mixture in the middle and seal the edges. Press the
patty to round shape by keeping in between two palms.
Heat the ghee in a wide pan, immerse the patty in the egg mixture, which is beaten and
drop in the ghee. Fry on both sides until golden brown.
Repeat the process for the remaining patties. Few bread crumbs can also be added to the
mashed potatoes if desired, to get crisp patties.
Serve hot with tomato sauce or chutney.
