Ingredients:

2 hamburger buns
2 tbsp unsalted butter
1 tbsp sugar
10 cashews
10 rasins (yellow one)
10 preserved cherries (optional)
2 tbsp freshly shredded coconut

Coconut Sandwich

Method:
  1. Heat a little butter in a fry pan, fry the shredded coconut until golden (you can feel the flavor). Take it off from the pan and collect it in a small mixing bowl.
  2. Again add a little butter to the pan and fry the cashews (if it is raw), take it and add it to the coconut.
  3. Add the thawed butter, sugar and cherries to the coconut. Mix it well and keep aside.
  4. Heat the pan, drop a little butter to the fry pan and just heat the bun in it. Do the same thing for the other slice.
  5. Spread the coconut mix over the bottom piece of the bun (make sure of the heat, otherwise the butter will be melted). Cover it with the other slice.
  6. Cut the sandwich carefully into two slices and serve. Kids love these and very nutritious too.
    Serves: 2
    Preparation time: 15 minutes
