Ingredients:

2 cups basmati rice
2-3 egg plants (brinjal), cut into long pieces
8 red chilies
2 tsp coriander seeds
4 tsp bengal gram
4 tsp black gram
A pinch of turmeric
3 tsp sesame seeds
A small lemon size of tamarind
3-4 tbsp oil
Salt to taste

Method:
  1. Cook the rice and keep aside to cool.
  2. Heat 1 tsp of oil in a pan, add red chilies, bengal gram, black gram, coriander seeds, sesame seeds and fry until they are light brown. Cool and make powder.
  3. Heat the remaining oil in the same pan and fry the egg plant pieces. Also add turmeric, tamarind pulp, salt, prepared powder and mix well. Cook until the egg plant pieces are tender.
  4. Add this mixture to the cooked rice, mix well and serve.
    Serves: 3-4
    Preparation time: 30 minutes
