Ingredients:

1 1/2 cups rice
1/4 cup ghee or butter
1 onion, chopped
4-5 garlic flakes, chopped finely
2-3 cardamoms
Salt to taste
1/2 tsp turmeric
1 tbsp lemon juice
1/2 cup grated fresh coconut

Lemon Coconut Rice

Method:
  1. Heat ghee in a pan, fry the onions, garlic till golden brown.
  2. Add cardamoms and washed rice and fry for 5 minutes.
  3. Add salt, turmeric and enough water to cook.
  4. When rice is almost cooked, add lemon juice and grated coconut. Cover and cook till done.
  5. Serve with any gravy curry.
