| Ingredients: 1 cup basmati rice
1/2 cup roasted cashews
1/2 cup peas
2 tbsp ghee or butter
A pinch of turmeric
A pinch of asafoetida
Salt to taste

Cashewnut Rice With Peas |
Method:
Clean and soak the rice in water for few minutes.
In a 1-quart pan heat ghee and fry green peas and asafoetida for 2 minutes.
Then add drained rice and stir over medium heat for 30 seconds.
Add water, turmeric, salt to the rice mixture and bring to a full boil by covering the
pan.
Cook on medium heat for 20-30 minutes or until the rice is done.
Add roasted cashews to the rice and stir well.
Garnish with coriander leaves and serve.
