1 cup leftover rice
1 1/2 cup whole wheat flour
2 tbsp sugar
2 tsp baking powder
2 eggs
1/2 cup skim milk
1/4 cup vegetable oil
1/4 tsp almond extract
Rice Muffins
Method:
1. Mix flour with sugar and
baking powder.
2. Beat the eggs well add remaining ingredients, adding rice in
last.
3. Add the flour mixture to the eggs mixture and combine two
mixtures just until moistened.
4. Spoon the combined mixture into 12 muffin cups, which are
greased well.
5. Bake at 350 degrees F for 30 minutes.
6. Serve with tea or coffee.
