| Ingredients: 1 cup orange juice
1 cup butter
1/2 tsp salt
2 eggs
2 cups all-purpose flour
1 cup butter milk
1 tsp soda
1 cup each raisins and pecans
Orange wedges for garnishing (optional)
For icing Orange nut cake:
2 cups powdered sugar
2 tbsp orange juice
1 tbsp lemon juice
3 tbsp butter
Cream the butter, add orange and lemon juices alternately with sugar until icing is well
blended. |
Orange Nut Cake

Method:
Cream butter and sugar, add eggs, flour, salt and blend in a mixer.
Add soda to the butter milk and shift this to the creamed mixture.
Alternatively add pecans, raisins, orange juice and blend to a smooth paste.
Transfer this mixture to a greased and floured baking pan.
Bake at 350 degrees F for about 25- 30 minutes.
Decorate with above prepared icing and orange wedges, if desired.
