Ingredients:

1 cup plain flour (maida)
1/2 cup butter, softened
1/2 cup castor sugar
1/2 tsp. baking powder
1 tbsp. lemon juice
1/2 tsp. vanilla essence
1 cup crushed cornflakes

Method:
  1. Preheat the oven to 350 degrees F.
  2. Mix the softened butter and castor sugar well in a mixing bowl. To this add flour, baking powder, lemon juice, vanilla essence and mix well. The mixture should look like a dough.
  3. Divide the dough into 15 equal portions and roll in the crushed cornflakes. Place these on a greased baking tray.
  4. Keep the tray in the oven and bake at 350 degrees F for 20-25 minutes. Remove the tray from the oven and cool.
  5. Serve warm or cold.
    Makes 15 cookies
    Preparation time: 40 minutes
