Ingredients:

Black:
1 1/2 cups all purpose flour
1 cup sugar
1/4 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup water
1/3 cup vegetable oil
1 tbsp white vinegar
White:
8 oz cream cheese, at room temp.
1 egg
1/3 cup sugar
6 oz semi-sweet chocolate chips

Black Bottom Cup Cakes

Method:
  1. In a large bowl, stir together flour, sugar, cocoa, baking soda and salt. Pour water, oil, vinegar and mix in a blender.
  2. In a separate bowl, beat cream cheese until smooth.
  3. Beat the eggs with sugar and then stir in chocolate chips.
  4. Scoop chocolate batter evenly into muffin pans with paper baking cups.
  5. Spoon a heaping tbsp of cream cheese mixture onto center of batter in each pan.
  6. Bake 25-30 minutes until pick inserted in dark part comes out clean.
  7. Cool cup cakes 10 minutes in pans, then remove to a rack to cool completely.
