Ingredients:

2 bananas
1 cup butter, softened
1 cup castor sugar
1/2 cup walnuts, chopped
1 cup plain flour (maida)
1/2 tsp. soda bi-carb
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. vanilla essence
3 tbsp. milk
Butter to grease the muffin moulds

Banana Walnut Muffins

Method:
  1. Preheat the oven to 350 degrees F. Grease the muffin moulds with butter and keep aside.
  2. Sieve the flour, soda bi-carb, baking powder and salt in a bowl and keep aside.
  3. Mix the softened butter and castor sugar well in a mixing bowl.
  4. Peel and chop the bananas and add to the butter mixture. Mix well. Also add vanilla essence, sifted flour mixture, walnuts, milk and mix well to make a batter like consistency.
  5. Spoon 2 tbsp of batter into each greased muffin mould and bake in the oven for 20-25 minutes.
  6. Remove from the oven and transfer to a serving plate. Serve warm or cold.
    Makes 18 muffins
