Ingredients:500
gms potatoes, peeled and cut into 4 pieces
100 gms paneer, grated
Small pice of ginger, finely chopped
3 tbsp cashews
1-2 small bunches of coriander leaves
1-2 small bunches of mint leaves
8-10 green chilies
2 tsp amchur (dry mango) powder
Salt to taste

Potato & Paneer Chutney

Method:
- Scoop out the middle portion of the potatoes with a spoon and deep fry in hot oil until
golden brown.
- Mix well, grated paneer, cashews, chopped ginger, few coriander leaves, 2-3 chopped
green chilies in a mixing bowl and stuff in the scooped portions of potatoes. Keep aside.
- Mix remaining green chilies, coriander leaves, mint leaves and blend them in a mixer to
a fine chutney. Add amchur powder to this and mix well.
- Heat oil in a pan and add the above chutney. Fry for a while and add the stuffed
potatoes. Cover and cook for 15 minutes or until the potatoes are tender.
- Serve hot with chapaties.
