1/2 kg cucumbers
1/2 tsp salt
A small lump of tamarind
1/2 tsp oil
A pinch of turmeric powder
Few coriander leaves For seasoning: 1/2 tsp urad dal
A pinch of asafoetida
1/2 tsp mustard seeds
3 red chilies
1/4 tsp fenugreek seeds
3 green chilies
Cucumber Chutney
Method:
Peel and finely chop the cucumber. Mix with salt and turmeric in a bowl, set aside for
15 minutes and then squeeze out the excess water.
Heat oil in a pan and fry seasoning ingredients.
Grind the fried ingredients along with the tamarind for 3 minutes till a fine paste is
obtained.
Mix the paste and the chopped cucumber till well combined.
Serve the chutney garnished with chopped coriander leaves.
