Ingredients:
200 gm thick poha (flaked rice)
1/2 tsp asafoetida (hing)
1 tsp sugar
1/2 tsp turmeric powder
Salt to taste
50 gm raw peanuts
1 small chopped capsicum
Some florets of cauliflower (chopped)
9-10 French beans (round cut)
3-4 green chilies
7-8 curry leaves (patta)
1/2 tsp mustard seeds
2 tsp fresh peas
1 tsp urad dal
1/2 small onion, chopped
1 small bunch of chopped coriander
1 lemon
2 tbsp oil

Vegetable Poha

Method:
  1. Take poha in a bowl, wash it twice and strain the water, it will become soft, add some salt, 1 tsp sugar, 1/2 tsp turmeric and hing to it, mix it with a spoon and keep it aside.
  2. Now take oil in a pan and add curry patta, green chilies and mustard seeds to it, put urad dal and peanuts along with it.
  3. When dal starts turning red and peanuts are hard, add cauliflower, peas, capsicum and beans to it. When they are half done, add onions and little salt to it, keep it covered on a medium flame.
  4. After two minutes when the onions are soft, check the vegetables, if they are soft then add poha to it and mix it carefully on low flame, keep mixing for two minutes so that the turmeric is cooked properly.
  5. Keep covered for two minutes and then remove it and garnish with chopped coriander and shredded coconut.
  6. NOTE: Small cut potatoes can also be added. Turmeric can be added to the poha or cooked with the vegetables. Salt can be put half in poha and half in the vegetables so that the flavor is mixed properly.
  7. Serve with lemon, coconut dressing or pickles.
    Serves: 4
