Ingredients:
4 slices of French or Italian bread
2 tomatoes (chopped and deseeded)
1 onion (chopped)
Few sprigs of parsley (chopped)
1-2 cloves of garlic (crushed)
1 teaspoon of thyme leaves
1/2 teaspoon of oregano
1/4 teaspoon of black pepper
2 tablespoons of olive oil
1 cup of grated mozzarella cheese
Parmesan cheese (optional)
Chili flakes (optional)
Salt to taste

Tomato Bruschetta

Method:
  1. Mix onions, parsley, tomatoes, garlic, thyme, salt, oil and spices in a bowl.
  2. Put slices of bread on a tray, and spread a tablespoon of the tomato mixture on each bread slice. Top each of them with the mozzarella and Parmesan cheeses.
  3. Bake in a 300 degree oven or toaster oven for 5 minutes or until golden brown around the edges. Cool and sprinkle chili flakes, if desired.
  4. Serve with any Italian pasta dish.
