Ingredients:

Vegetables like beans, bell pepper, carrots, etc.
Coconut powder - 6 tsp.
Methi seeds - 1/2 sp.
Red chilies 4-5
Salt, tamarind paste to taste
Curry leaves
Mustard 1/2 sp.
Oil 2 sp.

Thengai Araitha Kuzhambu

Method:
  1. Fry methi seeds and red chilies in little bit of oil and grind it along with coconut into a paste.
  2. Bring the vegetables to boil. Add salt, tamarind paste and some curry leaves.
  3. When the vegetables are cooked add the ground paste and simmer for about a minute.
  4. Heat one spoon oil and add mustard seeds and garnish.
  5. Serve with hot rice.
    Preparation time: 15-20 minutes.
