Ingredients:

200 gms button mushrooms
200 gms paneer, grated
2 tbsp. finely chopped coriander
1 tbsp. finely chopped green chilies (optional)
1 large onion, finely chopped
1/2 tsp. freshly ground pepper
1 level tsp. any good garam masala

Stuffed Capsicum

Method:
  1. Soak mushrooms in water for 2-3 hrs if there is time. Clean them well.
  2. Carefully remove the stems and make the cavity in the cap a little larger with a sharp knife. Finely chop the mushroom stems.
  3. Lightly sauté chopped stems and remove from fire. Add the onions, green chilies, coriander leaves, pepper, garam masala and grated onion.
  4. Rub some olive oil or other cooking oil into the mushroom caps and fill with the stuffing.
  5. Bake in a preheated oven of 180 degrees C for 10 to 15 minutes. The alternate to baking is to lightly fry the stuffed mushrooms in a sauce pan.
  6. Serve with mint chutney or as it is. Makes a very good starter.
