Ingredients:

250g fresh bean-sprouts
2 to3 spring onions (scallions)
2 to 3 carrots (cut in match sticks form)
1 medium red chili pepper (optional)
3 tbsp oil
2 packets noodles
1/2 tsp salt
1/2 tsp sugar
1 tsp of butter
1 tbsp light soy sauce
Few drops of sesame oil (optional)

Stir-Fry Bean Sprouts With Noodles

Method:
  1. Rinse bean sprouts in cold water, drain well on paper towels.
  2. Cut spring onions (scallions) in short sections. Thinly shred red pepper, if using, discarding the seeds.
  3. Boil noodles in hot water as directed on packet and drain the water from noodles when they are prepared. Add 1 tsp of butter in noodles.
  4. Heat the oil in preheated wok. Add bean sprouts, spring onions, carrots and chili pepper, if using and stir fry for 2 minutes. Add salt, sugar, soy sauce and sesame oil, if using to the mixture in wok. Stir well to blend.
  5. Add all ingredients in noodles and serve immediately hot.
    Preparation time: 30 minutes
