Ingredients:

1/4 pound medium shrimps peeled and cooked
1 medium size onion
2 tbsp. ginger and garlic - grated together
Spice of your choice, or use 1 tsp. black pepper coarsely ground
Alternate spices: 1 fresh chili and 1/4 th cup fresh coriander, chopped
Salt to taste
1 cup of instant mashed potato - dry
Juice of half lemon or 2 tbsp. bottled lemon juice
2 eggs lightly beaten
1/8th cup melted butter
1 lightly beaten egg for dipping
Bread crumbs
Oil for deep-frying

Shrimp Potato Fingers

Method:
  1. Finely chop the onion, shrimps and the chili if used.
  2. Mix all the ingredients except the last two, well; use water if needed to make dough type consistency.
  3. Roll into small finger shapes. Dip into eggs then roll in bread crumbs and deep fry until golden brown.
  4. Serve with sauce of choice
    Serves: 4 to 6
    Preparation time: Approx. 60 minutes
