| Ingredients: Rice - 1 cup
Potato - 1/4 kg
Green chilies - 8
Onions - 2
Turmeric powder - 1/4 tsp.
Tomatoes - 3
Dhania jeera powder - 1/2 tsp.
Coriander leaves - 1 tbsp.
Salt as per taste
Garam masala - 1/2 tsp.
Broken cashew nuts - 1 tbsp.
Oil - 3 tbsp.
For seasoning:
Mustard seeds, jeera, black gram, bengal gram -1 1/2 tsp. |
Potato Rice |
Method:
- Grind onion, tomato & green chilies together without adding water. Cook rice &
cool it.
- In a kadai, season with seasoning and add grounded paste and fry in a medium flame till
oil separates.
- Add dhania, jeera powder, salt, garam masala, turmeric powder and fry for few minutes.
- To this add the cooked rice and mix well. Peel the potato and cut into long thin strips
and fry in oil till crisp.
- Fry cashew in little ghee and add cashew fry, potato & cut coriander leaves to the
rice and serve hot.
Serves: 4-5
