Ingredients:

Rice - 1 cup
Potato - 1/4 kg
Green chilies - 8
Onions - 2
Turmeric powder - 1/4 tsp.
Tomatoes - 3
Dhania jeera powder - 1/2 tsp.
Coriander leaves - 1 tbsp.
Salt as per taste
Garam masala - 1/2 tsp.
Broken cashew nuts - 1 tbsp.
Oil - 3 tbsp.
For seasoning:
Mustard seeds, jeera, black gram, bengal gram -1 1/2 tsp.

Potato Rice

Method:
  1. Grind onion, tomato & green chilies together without adding water. Cook rice & cool it.
  2. In a kadai, season with seasoning and add grounded paste and fry in a medium flame till oil separates.
  3. Add dhania, jeera powder, salt, garam masala, turmeric powder and fry for few minutes.
  4. To this add the cooked rice and mix well. Peel the potato and cut into long thin strips and fry in oil till crisp.
  5. Fry cashew in little ghee and add cashew fry, potato & cut coriander leaves to the rice and serve hot.
    Serves: 4-5
    Preparation time: 20 minutes
