Ingredients:

Eggs- 4 nos
Milk-500 ml
Corn flour-1 1/2 tbsp
Sugar-300 g
Gelatin - 4 1/2 tsp
Hot water - 3 tbsp
Orange rind - 2 tsp
Oranges - 4 nos
Fresh cream, whipped -250 g
Orange essence - 1/4 tsp

Orange Souffle

Method:
  1. Separate egg yolk & egg whites.
  2. Peel & remove the orange segments from white part. Keep it aside.
  3. Take the hot water in a bowl & sprinkle the gelatin on it. Stir till it melts completely. If it doesn’t melt completely, keep the bowl in a hot water bath. So that it melts up completely.
  4. Take little milk & dissolve corn flour in it.
  5. In a vessel mix in egg yolks, sugar, corn flour mixture & milk. Cook by double boiling by constantly stirring it to avoid any lumps for 10 min or till the custard coats the spoon & becomes thick. Remove from the double boiler.
  6. Now take a spoonful of cooked custard & mix into the melted gelatin. Now pour this into the custard & mix in quickly. Cool the custard over a bowl of ice-cubes by stirring it at intervals.
  7. When custard cools to room temperature, fold in whipped cream, orange rind, orange segments & orange essence. Now refrigerate it till semi- set.
  8. Meantime beat the egg white till stiff, adding a pinch of salt. When custard is semi-set, fold in the beaten egg white without breaking the air in it.
  9. Now pour in attractive dish & refrigerate for 3 hrs or till set. Decorate it with whipped cream, strips of orange rind & small orange segments.
