Ingredients:

2 cups rice, boiled with salt
1 cup cabbage, shredded
1 cup red kidney beans, boiled
5 flakes garlic, crushed
2 onions, sliced
2 capsicums, sliced
6 tbsp oil
3 tbsp soya sauce
1 tbsp chili powder
Salt to taste

Mexican Rice

Method:
  1. In a broad vessel heat oil and fry the onions, till golden brown, keep aside.
  2. In the same oil fry the capsicum for a minute and keep aside. Then fry cabbage for 2 minutes and keep aside.
  3. In the remaining oil fry crushed garlic, add the red kidney beans, stir, add the soya sauce, chili powder, salt and stir for 2 minutes.
  4. Then add the cooked rice, onions, cabbage & capsicum. Mix well and serve with hot sauce.
    Serves: 4
    Preparation time: 30 minutes
