Ingredients:

Cooked rice – 2 cups
Grated green mango – 1 cup
Chopped onions - 1/2 cup (optional)
Salt - 2 tsp
Chili powder - 2 tsp
Turmeric powder - 1 tsp
Asafoetida -1 pinch
Mustard -1 tsp
Oil - 2 to 3 tbsp
Curry leaves - small bunch
Fried peanuts - a handful
For Raitha:
Yogurt - 1/2 cup
Baby okras - 6 to 8

Mouth-Watering Mango Rice

Method:
  1. Heat oil in a pan and add mustard, turmeric powder and asafoetida.
  2. After the mustard splutters, add chopped onions and fry till they turn golden brown.
  3. Add the grated mango, chili powder and salt. Cook the mango till it becomes very soft.
  4. Now, add the cooked rice. Stir well and garnish with curry leaves.
  5. Sprinkle fried peanuts on top before serving. Serve with the "Baby Okra-Raitha".
    Serves: 4 to 6
    Preparation time: 15 - 20 minutes
    For Baby-Okra Raitha:
    Fry the baby okras and mix with salted yogurt. Voila! Mouth watering Mango Rice is ready to eat!
