Ingredients:

Chicken 1/2 kg clean, chop into desired size (about 1 to 1 1/2 inch pieces)
Chili powder 3 tbsp
Coriander powder 2 tbsp
Ajinomoto 1 pinch
Red food coloring 1 pinch
Curd 1 to 2 tbsp
Oil 1 to 2 tbsp (as desired)
Salt to taste

Madras Chicken

Method:
  1. Mix all ingredients and marinate in refrigerator for 2 hours.
  2. Then heat oil in a pan and add marinated chicken. Keep stirring till gravy drains and chicken shrinks (a nice aroma will come)
  3. Then add some water and allow to simmer. When chicken is done fry till dry and garnish with chopped coriander leaves. Serve with rice and dhal or rasam, roti, phulka, fried rice, curd rice, etc.
    Serves: 4 persons
    Preparation time: 10-15 mins
