Ingredients:

1/2 cup maida
1/2 cup wheatflour/atta
1/2 cup rice flour
1/2 cup sooji
1/2 cup finely chopped onions
1/2 cup oil
Salt to taste
1 teaspoonful red chili powder
1/2 teaspoonful baking powder
1/2 teaspoonful jeera
Oil for deep frying

Maddooru Vada

Method:
  1. Mix all the flours, onions, salt, jeera, baking powder, chili powder and make a well in the center of the mixture.
  2. Heat 1/2 cup oil and pour into the center of the well. Mix well and cover and keep aside for 20 minutes. Then divide this mixture into two parts.
  3. In one half sprinkle water to bind it into a stiff dough. Heat oil in a wok/kadai Make 3 millimeter thick pooris about 4-6inch diameter and deep fry in hot oil till golden brown and crisp.
  4. After finishing this, make a stiff dough with the rest of the dry mixture and make pooris.
  5. Serve with: Sweet tamarind chutney/coconut chutney
    Serves: 8 persons
    Preparation time: 1 hour
