Ingredients:

1 kg fish
1 egg
1/4 cup flour
1/4 cup potatoes, boiled and mashed
1 small onion, grated
2 tsps ground black pepper
1/2 tsp. baking powder
Oil for frying

Fish Croquettes

Method:
  1. Steam the fish for 5 minutes. Cool and remove skin and bones. Place in a mixing bowl breaking up into small pieces.
  2. Add egg, mixing thoroughly. Stir in flour, potatoes, onion, black pepper and baking powder until well combined. Form mixture into 24 croquettes.
  3. Drop into hot oil and fry without crowding from 3 to 5 minutes or until golden brown on all sides. Drain on a paper towel and garnish with lemon wedges.
  4. Serve with sliced tomatoes, cocktail sauce and crisp green salad.
    Serves: 8 to 10
    Preparation time: 30 minutes
