kg fish
1 egg
1/4 cup flour
1/4 cup potatoes, boiled and mashed
1 small onion, grated
2 tsps ground black pepper
1/2 tsp. baking powder

Method:
- Steam the fish for 5 minutes. Cool and remove skin and bones. Place in a mixing bowl
breaking up into small pieces.
- Add egg, mixing thoroughly. Stir in flour, potatoes, onion, black pepper and baking
powder until well combined. Form mixture into 24 croquettes.
- Drop into hot oil and fry without crowding from 3 to 5 minutes or until golden brown on
all sides. Drain on a paper towel and garnish with lemon wedges.
- Serve with sliced tomatoes, cocktail sauce and crisp green salad.
