Ingredients:

Messy bit:
1/4 cup corn oil
3 carrots
6 cloves garlic
4 onions
1 inch piece fresh ginger
Large tin tomatoes
1/2 red pepper
1 teaspoon salt
1 teaspoon turmeric
1 pint water
Easy bit:
6 chicken breasts, diced
1/2 cup corn oil
1 teaspoon cumin powder
1 teaspoon salt
1 teaspoon garam masala
1 teaspoon chili powder
1 teaspoon coriander powder
Bunch of fresh coriander leaves
Note; When reaching easy bit, have cold beer and loud music to hand as it makes the whole thing so much fun!!!!

Fast Chicken Curry

Method:

Messy bit:

  1. Coarsely chop all ingredients and fry off on a high heat, stirring now and then.
  2. After 10 minutes frying, add the water, cover the pan and simmer for 20 minutes. Allow it to cool slightly, then blitz the whole lot in a liquidiser until mega smooth.
  3. You may need to do this in 2 or 3 batches. That’s the messy bit over, so relax with the previously mentioned beer and music.

Easy bit:

  1. Put the chicken pieces in a hot pan with a touch of the oil and 1/2 cup of the liquidised mixture and fry off for about 10 minutes or until just cooked.
  2. Remove the chicken from the pan, drain off any sedement. Now add the rest of the oil and about 6 cups of the liquidised mix to the pan and put on a high heat.
  3. Stir as it boils, then add all the other ‘easy’ ingredients apart from the fresh coriander. Turn to a medium heat for about 5 minutes, then add the chicken pieces. After another 5 minutes, add the fresh coriander and serve with plain basmati rice.
  4. PS: Try this with the curry. Take 6 fresh lemons, peel and liquidise. Add this to 1 litre of tonic water. Put all into a big jug with tons of ice and serve. The addition of vodka is optional depending on the occasion!!!!
