| Ingredients: Rice
3 cups
Grated coconut 1 1/2 cups
Urad dal 2 tbsp.
Chana dal 2 tbsp.
Cashew nuts 6
Cumin seeds 1 tbsp.
Green chilies 5 chopped
Curry leaves few
Ghee 1/4 cup
Salt to taste |
Coconut Rice |
Method:
- Cook the rice in 5 cups of water (ratio is 1:2) such that the rice is not sticky.
- Heat oil in a pan. Add cumin seeds, urad dal, chana dal and cashew nuts. Fry till it
turns brown.
- Add green chilies and curry leaves. Fry for few seconds. Add grated coconut and fry till
for 5 minutes.
- Take a wide vessel and spread the cooked rice into a layer. Make another layer of
coconut mixer on top of rice layer. Sprinkle the salt and mix it well.
- Serve the dish with pappad or chips.
