Ingredients:

Rice 3 cups
Grated coconut 1 1/2 cups
Urad dal 2 tbsp.
Chana dal 2 tbsp.
Cashew nuts 6
Cumin seeds 1 tbsp.
Green chilies 5 chopped
Curry leaves few
Ghee 1/4 cup
Salt to taste

Coconut Rice

Method:
  1. Cook the rice in 5 cups of water (ratio is 1:2) such that the rice is not sticky.
  2. Heat oil in a pan. Add cumin seeds, urad dal, chana dal and cashew nuts. Fry till it turns brown.
  3. Add green chilies and curry leaves. Fry for few seconds. Add grated coconut and fry till for 5 minutes.
  4. Take a wide vessel and spread the cooked rice into a layer. Make another layer of coconut mixer on top of rice layer. Sprinkle the salt and mix it well.
  5. Serve the dish with pappad or chips.
    Preparation time: 1 hour
