Ingredients:

1 kg minced meat
250 gms onions
2 tsp. ginger & garlic paste
2 tsp each luch luch (poppy seeds), dhania (coriander) powder, jeera (cumin) powder
10 cloves
8 cardamoms
2 sticks cinnamon
1/2 tsp. shahzeera (black cumin seeds)
1 tsp. kebab chinni
1 tsp. raw papaya paste
1 cup oil
A few mint leaves, half onion, two lemons, cut into four cubes each.

Chura Kebab

Method:
  1. Wash the minced meat and squeeze out all the water and keep it aside.
  2. Fry the sliced onion in oil till light brown. Remove from oil and keep aside.
  3. Roast all the dry ingredients except the salt and chili powder. Grind all the masalas ,onion, salt, chili powder to a fine paste.
  4. Mix well all the ingredients to the minced meat and mix it well. Keep aside for 15 to 20 minutes.
  5. Heat the oil in a pan and put the meat into it. Stir well for about 15 minutes then cover the lid and let it cook for 15 minutes.
  6. Remove the lid and keep stirring till all the water has dried and the meat looks like crumbs (chura). Take out in a serving dish and garnish with fresh mint leaves, thin sliced onions and lemon cubes.
  7. Serve hot with rotis or naan.
