Ingredients:

1 whole chicken
Salt & pepper to taste
4 oz or 1 cup butter or margarine
1 oz or 1/4 cup of flour
1/2 pint or 1&1/4 cup milk
2 oz or 1/2 cup cheese grated
1 tsp French mustard
1 tbsp crushed corn flakes

Chicken Mornay

Method:
  1. Cut the chicken from joints. Dot with butter and bake for 20 minutes in oven.
  2. Make the white sauce. Melt 1 oz butter, add flour and mix well and cook for 2 to 3 minutes. Remove from heat and add milk, 1 oz cheese and mix well and cook for 3 minutes.
  3. Add remaining butter little time to time and cook again for 5 minutes. Pour the excess liquid from chicken, cover with sauce and sprinkle with corn flakes and remaining cheese.
  4. Grill for 5 to 10 minutes or until bubbling. (Oven setting: 400° F or gas mark 6). Serve very hot.
    Serves: 4 to 5
    Preparation time: 50 minutes
