Ingredients:

2 cups carrot grated
1 cup cooked rice (preferably long grain)
2 cans evaporated milk
Condensed milk
A little milk (whole or Vit D)
Dry fruits (raisins, cashews, almonds)
2 tbsp ghee (butter)
1 tsp cardamom powder

Carrot-Rice Pudding

Method:
  1. Heat ghee in a kadahi or pan. Fry the dry fruits and take them out.
  2. Add grated carrot to the kadahi and fry on Medium heat till cooked.
  3. In a deep microwave-safe bowl, mix the fried carrot, rice, evaporated milk and dry fruits. Microwave on high for 10 mins.
  4. Stir, add condensed milk till sufficiently sweetened and a little milk if the pudding becomes too dry.
  5. Microwave on high again for 5 mins. Add cardamon powder and refrigerate.
    Preparation time: 20 minutes
