Ingredients:

Fresh Bell Pepper (Capsicum) - 6
Cooked Rice - 1 Cup
Grated Beet root - 1/2 Cup
Chopped Onions - 1/2 Cup
Chili Powder - 1/4 Tsp
Salt - 1/2 Tsp
Jeera - 1 Tsp
Garam Masala - 1 Tsp
Oil - 2 Tbsp

Bell Pepper Bonanza

Method:
  1. Cut the stem of the Bell Pepper and make a small slit at the top.
  2. Remove the seeds from inside and make it hollow.
  3. For the stuffing: Heat some oil in a kadai. Add Jeera and the chopped onions and fry till the onions turn golden brown.
  4. Add the grated beet root , chili powder, salt, garam masala and saute for 2 mts.
  5. Add the cooked rice to the above ingredients. Stuff each Bell pepper with the beet root rice prepared as above.
  6. Smear some salt all over the stuffed Bell Pepper and microwave for 5 to 10 mts or till the Bell Pepper is well cooked. Serve hot with onion raitha.
    Serves: 6
