Ingredients:

1/2 kg long-shaped brinjals (baingan)
1 tomato, chopped
2 green chilies, chopped
Salt to taste
500 gms yogurt (dahi)
1 tsp. sugar
1/2 tsp. cumin seeds
1/4 tsp. red chili powder
1/4 tsp. turmeric
2 sprigs curry leaves
Coriander leaves
Oil for frying

Baingan Raita

Method:
  1. Cut brinjals into half from the middle and sprinkle salt, chili powder, turmeric and mix well. Fry them in oil. Brinjals are not to be fried for long, so take them out and keep aside.
  2. Pour the curd in a bowl and beat well by adding salt, sugar and keep aside. Then heat 2 tsp. of oil and fry mustard seeds and curry leaves.
  3. Add chopped tomatoes, green chilies and fry for a few seconds. Add curd mixture and fried brinjals. Mix everything well. Then immediately turn off the heat.
  4. Garnish with coriander leaves and serve with rice.
