Ingredients:

Plantain
Potatoes
Brinjal (Eggplants)
Carrots
Beans
Drumstick
Green peas
Bitter gourd
Green chilies
Grated coconut
Curry leaves

Aviyal

Method:
  1. Cut the vegetables into long pieces and boil in a pot with a pinch of salt and turmeric.
  2. Grind grated coconut and green chilies and salt. Add this to thick curd.
  3. Add cooked vegetables, mix well and heat for some time.
  4. when cooked, add curry leaves and half spoon of coconut oil.
  5. Serve hot with rice.
    Serves: 4
