Ingredients:
1 pound fresh asparagus
1 tbsp tamarind extract
5 green chilies
1/2 tsp cumin seeds
1/2 tsp roasted sesame seeds powder
1/2 tsp mustard seeds
2 dried red chilies
1 tsp oil
1/2 tsp chana dal
Salt to taste

Asparagus Chutney

Method:
  1. Wash asparagus and cut into fine pieces. Fry the asparagus pieces along with green chilies, cumin seeds and tamarind extract in a wok with 1/2 tsp oil.
  2. Fry the above until asparagus pieces become tender, then cool it. Grind the above in grinder/ mixer/ blender using small amount of cold water for 2 minutes.
  3. Then add salt, sesame powder, keep aside.
  4. In a small wok put 1/2 tsp oil and fry mustard seeds, red chilies and chana dal until mustard seeds start popping, then add it to asparagus chutney.
  5. Serve with hot rice / idli / dosa / pesarattu /curd rice.
    Serves: 4
    Preparation time: 10 minutes
