Ingredients:

1 large bunch of romaine lettuce, shredded
2 large tomatoes, finely chopped
2 medium sized onions, finely chopped
4 small cucumbers, finely diced
1/2 cup boiled & chilled kidney beans
1/2 cup boiled & chilled chick peas
Juice of 2 lemons
4-5 tbsps virgin olive oil
Salt and black pepper to taste

Arabian Salad

Method:
  1. Mix all the veggies, beans and peas in a salad bowl.
  2. Add salt, pepper, lemon juice, olive oil and toss well for 5 minutes or until oil coats the ingredients to give them a glaze.
  3. Serve immediately before meals.
    Serves: 2
    Preparation time: 15 minutes
