Ingredients:

2 oz diced ham
1 medium carrot, diced
1 medium potato, peeled and diced
1/2 medium onion, diced
1 stalk celery, diced
4 cups chicken broth
1 leek, diced
1 small zucchini, diced
1/4 lb green beans, ends trimmed and cut into 2-inch pieces
1/2 tsp dried thyme
1/4 tsp pepper
1/2 tsp salt
2 tbsp chopped parsley
2 tbsp parmesan cheese
1 tbsp cooking oil

Vegetable & Ham Soup

Method:
  1. Heat oil in a pot until hot. Add onion and ham; cook for 1 minute.
  2. Add carrot, potato, celery and broth; cook for 20 minutes.
  3. Add the remaining ingredients except parsley and cheese; cook for 10 minutes.
  4. Sprinkle with parsley and parmesan cheese just before serving.
    Serves: 4-6
    Preparation time: 30-40 minutes
