| Ingredients: 1 medium onion,
quartered
2 cups mixed vegetables (carrots, beans, peas, cauliflower, etc) roughly chopped
2 stalks celery, roughly chopped
3 to 4 coriander stems
1 tsp. whole peppercorns |

Method:
- Place all the ingredients in a large pan and add 6 cups of water. Bring to a boil and
then lower the heat.
- Cover with a lid and simmer for 20 minutes till the vegetables have released their
flavors.
- Cool and strain. Use as required.
Makes 4 cups
