Ingredients:

1 1/2 cups short grain rice, washed & drained
3 fresh shiitake mushrooms, trimmed & sliced or 3 dried black mushrooms, soaked, drained, trimmed & sliced
3 button mushrooms, trimmed & diced
1/4 cup diced carrot
1/4 cup frozen peas, thawed
1 1/2 cups water
1 1/2 cups dashi (Japanese soup stock)
2 tbsp sake (Japanese rice wine)
1 1/2 tbsp soy sauce
1/2 tsp salt

Mushroom Rice

Method:
  1. Combine all ingredients in the pot and mix well.
  2. Cover and cook until rice is done, for about 20-30 minutes.
    Serves: 4
    Preparation time: 30 minutes
