Ingredients:

1/2 lb lean ground beef
2 tbsp dry bread crumbs
1 tbsp chopped parsley
1 tbsp red wine
1/4 tsp salt
1/8 tsp pepper
1 tbsp olive oil
1/2 medium onion, chopped
2 cups water
1 can (14.5 oz) beef or chicken broth
1/2 cup red wine
1 medium carrot, diced
1 tomato, chopped
1 zucchini, diced
1 cup sliced cabbage
1/2 cup small pasta shells
1 tsp dried basil
Salt & pepper to taste
Grated parmesan cheese

Meatball Minestrone

Method:
  1. Combine the first 6 ingredients in a bowl and mix well. Shape mixture into 1-inch balls and set aside.
  2. Heat oil in a pot until hot. Add onion and cook for a minute. Add water, broth, wine, tomatoes and carrot. Cover and cook for 15 minutes.
  3. Add meatballs and cook for 5 minutes. Add zucchini, cabbage, pasta and basil. Cover and cook for 10 minutes.
  4. Add salt and pepper to taste. Serve with grated parmesan cheese on top.
    Serves: 4-6
    Preparation time: 30-40 minutes
