| Ingredients: 1 mandarin fish, about 500g
200g fine noodles
100g minced meat
1 cup fermented glutinous rice
1 tsp ginger shreds
1 tsp chive shreds
2 tbsp hot broad bean sauce
1 tbsp rice wine
1 tsp sugar
Salt to taste
2 tsp Soya sauce
3-4 tbsp vinegar
1 tsp mashed garlic
1 tsp gourmet powder
2 tbsp watered starch |
Mandarin Fish With Noodles

Method:
Clean the mandarin fish, make figure cuts on it, coat it with little Soya sauce, fry it
until it looks golden.
Saute the mashed garlic and then the minced meat, put in the hot broad bean sauce, when
red oil appears, put in the fermented glutinous rice, when they become dry, put in chive
shreds and ginger shreds.
Braise the fish with wine, salt, sugar, water on a strong fire to boiling, then stew it
until it is well-done, put in gourmet powder, watered starch to make paste, pour vinegar
in, then place it in a dish.
Place the cooked noodles by the side of the fish abdomen, finally pour the fish gravy on
the fish and noodles and serve.
