| Ingredients: 4 1/2 cups flour
4 1/2 tsp baking powder
2 oz pork fat, diced
2 oz stir-fried flour
7/8 cup sugar
1/3 oz walnuts, chopped
1 tsp red preserved plum, shredded (optional)
1 tsp green preserved plum, shredded (optional) |

Method:
Mix the flour, baking powder, and 9 oz of water into dough. Let rise, then knead and
roll the dough until smooth and elastic. Divide the dough into 10 pieces.
Mash the pork fat in a bowl. Mix in the stir-fried flour, sugar, walnuts, preserved
plums, and enough water to make a filling. Divide the filling into 10 portions.
Roll out the dough balls into 3 inch circles. Place 1 portion of filling in each wrapper
and pinch gather the edges as illustrated. Steam in a steamer for 7 minutes, or until
cooked. Remove and serve.
