Ingredients:

1/2 capsicum, finely chopped
1 leaf cabbage, finely chopped
1/4 tomato, seeded & finely chopped
1 small onion, chopped
1" piece carrot, peeled
1 leaf spinach stem, finely chopped
1 floret cauliflower, finely chopped
1 French bean, chopped
3-4 mint leaves, finely chopped
3-4 coriander leaves, finely chopped
1/4" ginger, peeled & chopped
1 pod garlic, chopped
1/2 dried red chili, de seeded and crushed well
1/2 tsp Soya sauce
Salt to taste
1 tsp oil
1 tbsp corn flour
3 cups water or vegetable stock
1/2 tsp sugar

Chow Mien Soup

Method:
  1. Heat oil in a wok or pan, add all vegetables and stir fry for 3-4 minutes.
  2. Add 2 1/2 cups water and bring to a boil.
  3. Meanwhile, mix corn flour in the remaining water and add to the boiling soup. Stir continuously, till boil is resumed. Cook till the clarity returns.
  4. Add the Soya sauce, salt, sugar and crushed chili.
  5. Stir well. Serve piping hot with green chili in vinegar and Soya sauce
