Rasmalai
Ingredients:

2 lbs ricotta cheese
1/2 cup sugar
32 oz half & half milk
A pinch of saffron
1/4 tsp crushed cardamom seeds
1/2 cup blanched almonds
2 tbsp crushed green pistachios

An Indian famous tasty and delicious dessert dish made with cheese, sugar, half & half milk, almonds and pistachios.

Method:
  1. Mix the cheese with sugar and little cardamom powder and spread out on a baking tray.
  2. Bake at 350 degrees for 35 minutes or until it sets. It should not get brown.
  3. Remove from oven, cool at room temperature and cut into 2" squares. Place them in a dessert bowl.
  4. Mix the other ingredients, except the pistachios well in a separate dish and pour over the squares.
  5. Decorate with pistachios, chill for 2-3 hours and then serve.

Tip of the week

Cooking:

Use tissue papers for re heating fried snacks in the microwave. Eg. samosa, vada, kachori, bhajji, etc. The paper will absorb the excess oil, moisture and keep the snack crisp. Reheat on high for 1 to 1 1/2 minute.
Health:
Not the quick once over According to the American Dental Association, you should strive to brush your teeth twice a day for a minimum duration of 2 minutes each time. Two minutes is about the length of the average 'commercial break' during your favorite nightly television program. If you are unsure how long you spend brushing, try setting a kitchen timer. You may be surprised just how long two minutes can be!

*Food cooks evenly, quickly and efficiently in the microwave.
*Also the nutrients are preserved and the actual taste of the food is retained to a higher degree.
*Only a minimum amount of oil is required for cooking continental as well as traditional Indian dishes and so it seems desirable from the health point of view.
*Also shorter and controlled cooking time means that the food does not get burnt or over-cooked.
*Food may be cooked and served in the same dish.
*Another major advantage is that food is cooked minus the smoke, grease and heat and so the kitchen remains neat and tidy always.
*Microwave has multifarious uses like de-frosting, re-heating, etc.
