Featured Recipe
A Western non-vegetarian dish served with vegetables, olive oil and parsley

Ingredients:

1 4-oz chicken breast, skinless and boneless
1/4 cup lemon juice
2 tsp olive oil, divided
1/8 tsp each salt and pepper
1 tbsp parsley, chopped
1 2-oz zucchini, cut in strips
1 2-oz yellow squash, cut into strips
1/2 2-oz red pepper, cut in strips

Chicken Vegetable Medley

Method:
  1. Marinate the chicken breast in lemon juice, 1 tsp olive oil, salt and pepper for 30 minutes.
  2. Drain and grill chicken breast to desired doneness.
  3. Saute vegetables in remaining olive oil.
  4. Sprinkle with parsley and serve.
