CHOWLI AND BROWN RICE STEW

Chowli and Brown Rice Stew - Vegetarian Rice Recipes

INGREDIENTS

1 CUP BLACK EYED BEANS (LOBIA/CHOWLI), SOAKED AND THEN BOILED

2 TBSPS BROWN RICE, SOAKED

1 TBSP OLIVE OIL

1 BAY LEAF

1 TBSP CHOPPED GARLIC

2 MEDIUM ONIONS, CHOPPED

1 MEDIUM CARROT, PEELED

1 MEDIUM POTATO, PEELED

SALT TO TASTE

1 TSP FRESHLY CRUSHED BLACK PEPPERCORNS

1 BOTTLE ARRABIATA SAUCE

INSTRUCTIONS

1. HEAT OLIVE OIL IN A DEEP NONSTICK PAN, ADD BAY LEAF, GARLIC AND ONIONS AND SAUTE FOR 2 MINUTES.

2. CUT CARROT INTO LARGE CHUNKS AND ADD TO THE PAN. CUT POTATO INTO ¾ INCH CUBES AND ADD.

3. ADD BLACK EYED BEANS, BROWN RICE, 3 CUPS WATER, SALT, CRUSHED BLACK PEPPERCORNS AND MIX WELL.

4. COVER AND COOK TILL RICE AND VEGETABLES GET COMPLETELY COOKED.

5. ADD ARRABIATA SAUCE AND MIX WELL AND COOK FOR 2 MINUTES MORE.

6. ADD A LITTLE FRESHLY CRUSHED PEPPERCORNS AND MIX WELL.

7. TRANSFER INTO A SERVING BOWL AND SERVE HOT.
